You can't organise your main photo stream which is just a bottomless bucket that stores your photos in the order you take them or upload them
But Google has given us Album tagging until we get more tools
Google photo albums are just tags.
The photos don't actually go anywhere (like 'into' an album), they are just tagged with the name to make them easier to find again
The great thing is you can add many album tags to the same photo/s
If you had a photo of your Mum in Rome you can add album tags for 'Mum' 'Rome' 'Europe' 'Holidays' '2013' and the same photo will appear in all 5 albums and not just one
Of course you can add album tags to whole groups of photos at a time not just one.
You can even open an existing album (Europe) and add album tags to groups of photos in that album (Germany, Cyprus, Uncle Arthur)
That's why you shouldn't delete any photos from your main photo stream
Hopefully G will give us a better method of adding/editing/removing album tags in the near future
